Dinner in 15 min – Ham & cheese frittata #Dinnerin15 @schneiders

Weekdays, even in the summer can get a little hectic, so it is nice when you can get a delicious meal that is also nutritious on the table in approx 15 min.  This is also ideal once fall starts with  the after school activities gearing up and you are running around chauffeuring from one thing to the next. I like having Schneiders Country naturals ham on hand to help with some of those quick meals.  The Country Naturals ham  is fully cooked, but best of all it is gluten free!

When I buy a ham, I will sometimes cut it in half, use the 1st half to prepare a quick meal and then freeze the other half to pull out when I need another quick meal prepared.

 Frittatas are always a hit at our house and they are a great way to pack a fair bit of protein in a quick meal – great for breakfast, lunch or dinner. A frittata similar to an omelette or crustless quiche, with additional ingredients such as meats, cheeses, or vegetables.

 Dinner in 15

Ham and Cheese Frittata 

 2 tbsp (30 mL) butter or margarine [ I used coconut oil]

1/2  green pepper  [chopped]

3/4 cup diced ham

8 eggs, beaten

1 cup (250 mL) shredded cheddar cheese

1/2 cup (125 mL) chopped tomato (1 small)

2 tbsp (30 mL) basil

1/8 tsp (0.5 mL) pepper

In 10-inch nonstick skillet, melt butter over medium heat. Add in ham and pepper,  heat through for a minute, then stir in eggs, cheese, tomato, and ground pepper. Reduce heat to medium-low; as eggs set around edge of skillet, with spatula, gently lift cooked portions to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set, about 8 to 10 minutes.

Cover, remove from heat and let stand 3 to 4 minutes or until cheese is melted.

Loosen around edge of frittata. Cut into wedges and serve.

You can even have this for breakfast the next day…if you have any leftovers. 🙂
