This time of year is always filled with get-togethers and Holiday parties, it is always fun to see everyone. It is one of the things that I love…but I don’t like having to spend a lot of time preparing for those get-togethers. I have been busy baking for the Christmas holidays so it’s nice when I can just whip up a really quick appetizer to take along or one that can be made up if somebody drops by unexpectedly.
A very simple appetizer that I found a little while ago on the Life Made Delicious website is one that is easy and quick, and is made with one of my favorite things…bacon [well a lot of peoples’ favourite thing ] ๐
The bacon wrapped fig recipe on Life Made Delicious ย calls for using pistachio and basil leaf, I substituted the pistachio for goat cheese in one batch and some pesto in another.
My husband sometimes has some difficulty if the appetizers are on the drier side, so I like to add something that gives a bit of moisture to the appetizer. Goat cheese and pesto just adds a little bit of moisture – the combination is quite nice – but you can’t use too much of either or it will overpower the bacon and fig.
The other great thing about this is…. I always have bacon on hand as well as figs (one of my husband’s favorite snacks) and I always have Goat cheese or pesto on hand, so it’s a win-win for me!
Bacon wrapped figs
Package of bacon – approx 12 slices
24 figs ( I used Turkish) stems removed and slit lengthwise. 1/3 – 1/2 cup goat cheese
1/4 cup of fresh pesto.
Place bacon on a foil lined tray set oven at 350ยฐ to cook for approximately 10 -15minutes. Do not let it get too crispy!
Cut bacon slices in half, set aside.
Place half teaspoon of either goat cheese or pesto inside a fig.
Place fig on top of a slice of bacon and wrap bacon around fig placing in shallow dish seam side down.
Once all the figs have been rolled place dish in oven for 5-10 minutes – just to heat through- be careful not to cook bacon too much.
Once heated through, take out of oven, secure each with toothpick and place on serving dish.
