Gluten Free Breakfasts for the weekend

Weekends to me are a time to relax and do things that may not have been done through the week.  It is always hectic around here on weekday mornings, there are days my daughter has to be at school by 7 am so she has to have a breakfast that is quick and nutritious.  But on weekends we get to have more leisurely gluten free breakfasts, even get to sleep in!  So technically, I guess it would be brunch. 🙂

Even though it is the weekend and we get to relax, I still like to make sure that we all start the day with a nutritious breakfast ….no matter what time that may be.

There are times we have something sweet…like German pancakes, and at other times I like to have something savory like Egg muffins or an Italian Frittata.

This is a very simple and easy recipe found on the Life Made Delicious site  and works really well to have for a quick evening meal as well, when you are rushed. You can add so many things to it to make it more flavourful.  I keep it toned down a bit because my daughter is a bit picky :/but be creative and add different cheeses, meats, vegetables or spices.

Italian Frittata

2 tbsp (30 mL) butter or margarine [ I used coconut oil]

1/2 cup (125 mL) sliced green onions (8 medium)

8 eggs, beaten

1 cup (250 mL) shredded mozzarella cheese

1/2 cup (125 mL) chopped seeded tomato (1 small)

2 tbsp (30 mL) chopped fresh parsley

1/8 tsp (0.5 mL) pepper

1/2 cup (125 mL) grated Parmesan cheese

Additional chopped tomato, if desired

Additional chopped fresh parsley, if desired

Gluten Free breakfast

  • In 10-inch nonstick skillet, melt butter over medium heat. Add onions; cook 2 to 3 minutes, stirring frequently, until tender.

  • Stir in eggs, mozzarella cheese, tomato, parsley and pepper. Reduce heat to medium-low; cover and cook 9 to 11 minutes or until eggs are set around edge and light brown on bottom.

  • Sprinkle Parmesan cheese over top. Cover; remove from heat and let stand 3 to 4 minutes or until cheese is melted. If desired, garnish with additional chopped tomato and parsley.

Add a little salad and you have a great little brunch or you could just add some bacon and up your protein which works really well too! 🙂

  1. I love frittata! Being Italian, it was always a quick backup meal in my house growing up. You can add just about anything. This looks like a great recipe!
