With the warm weather, [once it warms up] comes the entertaining and the visiting throughout the summer. When friends drop by, it is very casual and we love going out to sit on the deck to enjoy their company and enjoy the beautiful weather. It is very easy to throw together a few quick and tasty gluten free appetizers and pull together a quick dinner. Really helps when you have your own garden nearby! 🙂 ! Who doesn’t love fresh fruits and vegetables when they come fresh from the garden?
I usually have a log of goat cheese on hand so when we have friends drop by it is easy to pull it out, add some gluten free rice crackers and some fresh grape tomatoes or strips of fresh peppers from the garden. Another favorite of mine and many of my friends [ which in reality, is a good thing] is roasted garlic. The smell of the garlic roasting on the deck as we are sitting there is so incredible, and really gets our mouth watering. It is so quick and easy to do – if you have a head or two of garlic on hand, some olive oil and foil – you are all set! I like roasting it out on the BBQ , but it can be done in the oven just as easily.
Roasted Garlic in Foil [can also be done in garlic roaster, but I seem to break those a lot!]
1-2 heads of garlic
¼ cup of Olive oil
enough foil to encase the garlic and oil [makes it look like a nice little package.
Take the head [s] of garlic and remove the outer layers of skin, almost to the cloves , slice off the top of the head so that the tops of the cloves cloves are exposed. Place in centre of the foil, drizzle with olive oil so that the head are covered, then bring the sides of the foil together and fold over to keep it from opening up, then place on cookie sheet or small pan. Place in centre of BBQ with heat at 350-400 – roast for 15-20 until the garlic is soft to touch and is a beautiful caramel color. Slide onto a plate, add some gluten free crackers or sliced cucumbers and voila- perfect and easy appetizer that you can spread onto crackers or a slice of brie or Camembert!
If it is late and friends are going to be staying for dinner – my quinoa salad is always a hit and can either be a side dish with burgers or as a main meal in itself! The is what I love best about summer – can be so spontaneous!
