Gluten Free Chex treats!

We are very excited about the Olympics starting; we have all our Canadian gear ready!  Can’t wait for the opening ceremonies and see our favorite events start.  At this house we are big on the Equestrian, swimming, and gymnastic events.  Love watching all the other events too – you might just catch me up early [luckily not too many events start before 9 am – 4am our time!] I was happy to be able to catch the Soccer match between the country of my birth –Uruguay, and UAE  Thursday – at a decent hour of noon!  The best part-Uruguay won the match 2-1. Yay!

I am not going to be able to catch the opening ceremonies live, but I have it all scheduled to record so we can watch it when we get home Friday night.

Looks like Saturday is going to be an action packed day of Olympic watching as most of our favorite events are starting then!  Not quite sure that I will be up at 5 am that day to watch the start of Dressage, but will definitely be watching through the day!

I am making some of the snacks we will be having that day – it is supposed to rain, so what could be better than catching all our favorite events and having great snacks along the way?  We need to keep up our stamina too; it can be quite excruciating watching some of those events!

One of my daughter’s favorite new cereals is the Gluten Free Chex by  General Mills  – she loves the Honey flavour,  they are pretty darn good might I add – they just don’t seem to last long around here…

The Life made Delicious website is packed full of great recipes and they have a whole section of gluten free recipes to choose from.You really have to check them out!  I thought I would make up some of Gluten free Chex Muddy Buddies as a sweet treat to snack on as we watched the events during the day.

 

Gluten Free Chex Muddy Buddies  (recipe copied from The Life made delicious website)

9 cups (2.25 L) Rice Chex* cereal ( we used the Honey Nut  Chex)
1 cup (250 mL) semi-sweet chocolate chips
1/2 cup (125 mL) peanut butter
1/2 cup (50 mL) butter or margarine
1 tsp (5 mL) vanilla
1 1/2 cups (375 mL) icing sugar –cut down a bit on the sugar

Method:

  • Into large bowl, measure cereal; set aside.
  • In 1-quart (1 L) microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 8-quart (8 L) resealable food-storage plastic bag.
  • Add icing sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

  1. These are on my to make list… I finally got to try some last Christmas, and while I’ve heard about them for years, you have no idea how absolutely addictive and incredible these are until you try them!
