Picnic time – A twist on the classic BLT

One of the great things about summer is being able to enjoy picnics outside- whether you are heading out to the beach, a park or just the backyard. Getting outside and taking advantage of this warm weather is a must, especially after our long winter.
And what better way to surprise someone special at work than bringing them a picnic so they can escape work for a bit and enjoy their lunch while enjoying the weather?
Kids also love picnics…when my daughter was much younger, we would even have picnics inside- she loved getting everything set up and sitting on a blanket to eat, those were special moments.
So if I have an excuse to have a picnic… I take it!
Even when we take our road trips, we like to stop for a little break and enjoy the area. Perfect excuse for a little picnic.
I make sure I head out to our local Loblaws to pick a few things to get things ready. Can’t have a picnic without snacks… Lays chips and Tostitos are a favourite in this house, even better if they are gluten free!!Picnic
Sandwiches make picnics easy around here and I like to change up certain classics to make them a little special. My latest twist is on the classic BLT. It includes many of my husband’s favourite things.

BLT with a twist
Per sandwich
1 gluten free bun (I use a loaf of gluten free french bread and cut in half to make more of a sub)
3-4 strips of Maple Leaf foods Natural Selections  bacon (we prefer it crispier, but not too crispy)
3 slices of tomato ( can also use sundried tomato to add a little more flavour)
1 romaine leaf
3-4 slices of brie ( if you can find the rectangular shaped one that is for paninis even better)

Start by laying the strips of bacon across bun, adding the brie on top then place in microwave for just a few seconds- you only want to melt the brie slightly not make it really runny. Once done add the tomatoes and wrap in foil. Just before eating, unwrap and place the romaine over the tomatoes and enjoy. The sandwich doesn’t need to be warm, but the previously melted brie will have mixed nicely with the bacon and tomatoes so the flavours come out beautifully.

Then we finish off with some yummy gluten free brownies from President’s Choice.
