It seems to have taken a fair bit of time for Spring to really arrive around here, but I think it is finally here to stay ( crossing fingers as I write this). Makes me want to get into the spring cleaning and organization mode. Always great to start off fresh for the year…that is one of the things I love about this time of year – it is like a rebirth of things… and a fresh start. That can mean either your yard or your inside space and can take a little bit of work!
But before we get started… we need to have some nourishment to get our energy up and get us motivated!
I love all the fresh colours of spring, they are so energizing – so I though I would start off lunch with some of them – along with some great gluten free english muffins from Glutino. They come in both multi grain and original, I love the nutty taste of the multigrain ones. My daughter used to love and eat avocado slices and cream cheese sandwiches when she was little, this is a little bit of a different twist.
Guacamole surprise
3 English muffins ( fun to do a mixture of original and multigrain)
1 avocado
1/2 tomato or 8-10 grape tomatoes
1 -2 tablespoons cream cheese (spreadable)
4 tsps lemon juice
salt and pepper to taste
Peel and core avocado place into food processor/chopper add tomato or grape tomatoes, cream cheese, lemon juice and salt. chop all together, meanwhile toast english muffins.
When everything is chopped and mixed together, place a couple spoonfuls on each slice of toasted english muffin and enjoy!
After a few hours of cleaning and organizing, my daughter always wants a treat – these Glutino cookies hit the spot and when they are done you can recycle the container to help organize – helps to have a place near the kitchen that I can find clips and elastics and throw extra change in so it doesn’t just sit on the counter.
