Brownie Caramel trifle

Our family loves dessert – and on more than one occasion we have all been known to have more than one serving… So when we received the lovely package of the new Enjoy Life Food mixes, we knew we had to try something special and gooey…

There were 5 new baking mixes in all – Pizza crust mix, Pancake mix, Brownie, muffin and an all-purpose flour mix. The best thing ….. you only have to add oil and water to any one of the mixes! How easy is that? They are also free from 8 of the most common allergens and each have 5 gms of protein per serving, along with probiotics to promote immune health that are heat resistant. They are made in a dedicated facility with ancient grains like Teff, Buckwheat, Millet and Quinoa flours, all certified gluten free, Kosher, Vegan and Halal as well as being verified Non-GMO.  They also come with a shelf life of 18 mths. These mixes will be on your grocery store shelves soon, so make sure to look for them!

We decided we were going to make a brownie trifle… trifle is my husband’s favourite dessert and it certainly did not disappoint, it was a big hit! Just enough sweet and gooeyness to satisfy our sweet tooth!

Brownie Caramel Trifle.

  • 1 Box Enjoy Life Brownie mix
  • 1 ½ – 2 cups raspberries
  • 250 ml of whipping cream
  • 1/12 – 2 cups gluten free prepared chocolate pudding
  • 1 ½ cups – 2 cups Dulce de leche  ( can purchase made – we made this recipe here)
  • 1 cup of toffee bits ( we made our own using 1 cup butter and 1 cup of brown sugar stirring over med heat until a dark amber colour and at hard candy stage -300 degrees, then spread on cookie sheet and allowed to cool, once cooled crack into small pieces)

Prepare the Brownie as per instructions, once baked you can set aside until the remaining ingredients are prepared.  Start preparing the Dulce the leche as this takes the longest. ( if you purchase ready made , can skip this step) Prepare the toffee and cool, while toffee and dulce de leche are cooling you can whip up the whipped cream.

Now to assembling –  cut the brownie into squares.  In a large bowl crumble a few of the squares along the bottom of the bowl,  add a layer of raspberries then a layer of chocolate pudding followed by a layer of dulce de leche and topped with a layer of whipped cream, repeat the layers ending with whipped cream. Sprinkle brownie crumbs along the top and add the toffee bits to decorate.  Refrigerate until serving and enjoy to the fullest!
