Getting back on track -a Healthy breakfast #Glutenfree

Weekday mornings are always so hectic around here. It is especially true after the holidays- when we haven’t made the healthiest choices throughout. The start of a new year is time to get back on track and time to get back to healthy. One of the things that gets my day off to a good start is having a very healthy breakfast and making sure that my family has a  great breakfast to go out the door with.

During the week I like to try to make sure that both my daughter and husband have a nutritious breakfast that I know will get them through to lunch.  Generally gluten free  oatmeal with either fresh or frozen fruit and some cream or milk. This is a great, healthy and quick breakfast for them and we can prepare it at night- throw some gluten-free oats in a bowl with some flax and either fresh fruit or frozen food and in the morning all they have to do is grab it out if fridge, add some water throw it in the microwave add cream and it is done.  How easy is that?

This way you are guaranteed to have a healthy breakfast in the morning without too much fuss or taking too much time. Plus, who doesn’t want a really nice hot breakfast on really cold mornings?

I like to start my day with either a nice bowl of fruit with some flax thrown in or with some yogurt. it kind of  boosts my energy and gets me going first thing -if I am feeling a little bit hungrier than usual, I add some quinoa flakes with yogurt – very filling and super nutritious! I also  throw in some cinnamon for its health benefits and taste. 🙂

Weekends, I will make up a special treat- sometimes some homemade granola, sometimes  waffles, pancakes or a  German pancake [Dutch baby] [all gluten free of course].  So many great options when you have more time  – egg muffins are also great!

The granola and some yogurt make a hearty cereal that is a little treat my daughter likes to have, I think it is mainly because of the chocolate chips, but the combination of oats, honey, and coconut is really nice! It is adapted from a recipe I used to make granola bars before we went gluten free but packed full of nutrition!

Gluten Free Granola {can also be made dairy free]

Preheat oven to 350 degrees

1 cup Gluten free rolled oats [I use Bob’s Red Mill, although I am sure there are others out there]

¼ cup Honey

½ cup of unsweetened coconut

1/3 cup of melted coconut oil [can also use butter]

¼ cup chocolate chips [can use df chocolate chips/chunks]

¼ cup of flax meal

Can also add in some sliced almonds and walnuts, pecans or cranberries [really anything you like!] .  My daughter likes her granola pretty plain – she really likes the coconut flavour that comes through.

Mix all ingredients until well combined. Transfer into a well greased pan, smooth down.  Bake in oven for 15-20 until the oatmeal is browned [toasted] . Remove and stir, let cool and place in a re-sealable container in the fridge, will keep for a few days.
