Hawaiian kabobs for Dinner #Dinnerin15

Getting dinner ready and on the table after a hectic day can sometimes be challenging… I probably should, but I don’t always plan my meals… So it is nice to know there are certain foods we can fall back on to create a healthy dinner and have a  meal on the table within 15 to 30 min of walking in the door.

The Schneiders  Country Naturals fully cooked ham are a huge help in this department. They are gluten free and they are also free of artificial ingredients and preservatives and they make it so easy to prepare a quick meal.

 This is a version of kebabs that I like to make once in a while. It is a nice change and it is a bit of a special meal… Served on a bed of rice or quinoa, it is even better for those nights on the run!

 Before starting on the kabobs, it is best to get the rice or quinoa started, so will be done in time.

 Hawaiian Kabobs

  •  3/4 IB (approx half) Schneider’s Country Naturals Ham
  • 1 can of pineapple chunks in juice [unsweetened]
  • 1 tablespoon dijon mustard
  • Grape tomatoes
  • 1 Red pepper
  • 1 green pepper
  • Skewers [Important to soak your skewer sticks if you are using wood ones, so they don’t burn on the grill!]

Heat BBQ on high

Slice ham into 1 in thick slices, then cut the slices into 1 in cubes

Cut red pepper and green pepper in 1 x 1 pieces

Drain pineapple chunks and reserve the pineapple juice for later.

Thread pineapple chunks, peppers, ham & grape tomatoes alternating, onto skewers.

Meanwhile, take ⅓  cup of reserved pineapple juice and mix well with dijon mustard – brush all kabobs liberally with dijon/juice.

Dinner

Place kabobs on lightly oiled grill – Cook for 6 to 8 minutes, brushing often with juice and dijon and turning frequently.  Should be lightly glazed/caramelized  when done.

 Serve 2-3 skewers per person  on bed of rice or quinoa for a complete meal.
