Special weekend morning treat with Glutino and chocolate.

I am part of the Glutino blogger program and am sent products for review.

Weekends are my time to take it easy and have something a little extra special for breakfast.  With so many options available right now from Glutino, it makes it easy to get something unique and quick together for special occasions. Today is Valentine’s day, but this can be made  for any special breakfast.

My daughter has always been a huge english muffin fan and has enjoyed the regular Glutino ones, but she really likes the new multi grain ones…the seeds add an extra nutty flavour and texture to them. And they have those special crevices that hold the butter for that extra enjoyment.  I thought I would try to use them  make a semi- shortcake for this morning as a special treat.

Strawberry chocolate english muffin treat

½ cup of coconut milk

2 tablespoons of sugar

3 tablespoons of cocoa

pint of strawberries

2 Glutino MultiGrain English Muffins

  • Make sure that when you open the can of coconut milk you are using the thick, creamier part of the milk, add to bowl and beat [whip] until thick, mix in cocoa and sugar.  Beat until combined. Set aside [tip- if you want this cream a bit thicker, make up ahead and place in fridge overnight]
  • Toast the English muffins – split in 2
  • Slice up a few strawberries
  • Once muffins are toasted arrange the strawberry slices in single layer on top, spread the thickened chocolate coconut mixture over the strawberries. Add top layer of muffin spread chocolate mixture to cover and arrange some more strawberry slices to cover and decorate.  Can add a few strawberries along side when serving.

These were the perfect treat, not too sweet… perfect yummy chocolate and strawberry flavour on a great nutty base.
