I love all the preparation that goes into the holidays, most of all I love baking scrumptious cookies with my daughter. Since we have become gluten free, we can’t make the same cookies we used to, so I have looked for other recipes that we can make that will be equally as good!
I have been using a lot of coconut flour lately; I love the amazing scent it has. I thought I would try this sugar cookie recipe using coconut flour.
When you use this flour you don’t use a large amount of it, but you do end up using a fair amount of eggs as it needs the moisture, and it has a wonderful texture when baked. These are just the start of our holiday baking, more to come!

Cinnamon Sugar cookies
Preheat oven to 375 degrees
4 eggs
½ to ¾ cup sugar [I reduce the sugar]
½ tsp vanilla
¼ tsp salt
½ cup melted butter
¾ cup sifted coconut flour
2 teaspoons cinnamon
Combine eggs, sugar, vanilla and butter. Mix well, stir in coconut flour, let mixture rest for about 5 minutes and allow it to thicken. Form dough into 1-1/2 in balls roll in cinnamon, coat thoroughly. Place on cookie sheet 1inch apart. Flatten balls to 2 in diameter. Bake at 375 for 15 minutes makes approx 24 cookies.

Yes, and it really does smell incredible! There are so many different flours out there, I always like discovering new ones to try and incorporate them into baking. The coconut flour has been by far my favorite – not just because of the texture and taste, but mainly because of its high nutritional value! 😉
