Quick, easy gluten free brownie

December 6, 2011

Lately, I have really been craving chocolate, but something that is more of a dessert than just plain chocolate. Luckily for me, a friend posted a recipe on her facebook page that I found really interesting – I followed the link to see if I could substitute some ingredients to make a Gluten Free version of it; I was able to find one already converted. This is really good, fast and easy to make when you are craving something chocolaty.

The recipe is courtesy of the Family Kitchen on Babble.com

Adapted from Instructables.com

Gluten-free Two Minute Mug Brownie

!/4 cup quinoa flour [can substitute reg flour if not GF}

1/8 cup packed brown sugar [I only use one tablespoon]

2 Tbsp unsweetened cocoa powder

2 Tbsp coconut oil -melted

2 Tbsp milk,

In a heatproof mug or ramekin, stir the dry ingredients together until all lumps are gone. Stir in the oil and milk until it resembles a thick paste.

Microwave on high for a minute, checking it after 30 seconds (microwaves are all different) — it will be done when it’s springy on top but still a bit gooey in the center.  Be careful it is hot!

So fast and easy especially when you have a late night chocolate craving, enjoy!

Mixing up everything in the cup!
