Saying goodbye to summer

 

Summer tends to just whiz by and before you know it, you are going back to school shopping to get the kids ready to head back. We generally like to getaway just before school starts and say goodbye to summer by heading up the family Chalet. This summer, we thought we would head to Montreal for this week and end our summer a little different.

We will still be going on a road trip, although one that is more than twice as long as we usually do. SInce we can’t just stop anywhere we want to get something to eat – we have to plan the food we take with us so that we have enough for meals and snacks along the way. This way, I know we are starting off our adventure on a safe note, gluten free.

One of the easiest meals and a very filling one to have is this Quinoa Taboulehh -packed full of nutrition, protein and fiber. It also travels very well- can be kept in a cooler until lunch time and it goes a long way.

Quinoa Tabouleh salad

1 cup rinsed, uncooked quinoa

1 ½ -2 cups water

1 avocado

2 plum tomatoes

1 can of chick peas [add a lot of great protein]

1/8cup lemon juice

1/8 cup olive oil

Teaspoon of dried basil

Cook quinoa as per instructions on packet – while quinoa is cooking chop the tomatoes and avocado, drain and rinse the chick peas and mix lemon juice and olive oil.

When quinoa is done, fluff with fork and spoon into a medium bowl, add tomatoes, avocado and chick peas, lemon/oil mixture and basil – toss together to combine well and serve. One of my favorite salads to take for potlucks and is a hit everywhere – just remember to rinse really well even if package says it is not necessary. Use a fine mesh strainer as well!

Can be stored in the refrigerator for up to 2 days.

These are just a couple of the food items we will be taking with us, as well as lots of fresh fruit and vegetables. I love road trips – It is always like having a picnic in the car!
