Summertime treats with Glutino Foods.

Summertime!

The smell of fresh cut grass, children running around playing in the parks, the squeals of fun from neighbourhood pools, and just chilling at the beach with the sun warming my skin… those are some of the smells, sights and sounds that I love in summer.  Throw in the smell of food grilling on the BBQ and it is heaven!

There is nothing better than enjoying a great BBQ on the deck after a gorgeous hot summer day and having a tasty cooling dessert to top it all off!  It just so happens that July is also ice cream month …  there are some very tasty and decadent brands out there, but I like to make ( and have ) something that is a delicious treat but has a lot less calories than store bought ice cream.  This way I get to add any toppings I want…without feeling guilty.  🙂 Win- Win!

Cool off with one of these:

Raspberry/Banana  Frozen treat

  • 1 frozen banana cut into chunks
  • 3/4 cup of frozen raspberries.
  • Glutino cookies ( chocolate vanilla creme cookies or chocolate chip)

Place frozen fruit in blender or food processor together  with coconut milk [if using] and blend until smooth*,  while the fruit is blending  crush 1 or 2  Glutino cookies – either the chocolate chip or the chocolate vanilla creme cookies {similar to oreos – these are my favourite] place in a bowls sprinkle with bits of cookie crumbs and then add half cookie to each side and serve immediately.

Of course you can certainly try some of the other great Glutino cookies and wafers as little extras – a chocolate wafer cookie would be perfect to use as a little scoop!  I like the crunchy sweet addition to the delicious tartness of the raspberries. Makes 3-4 servings.

For another special treat, try topping with crushed salted caramel pretzels and add a few in on the side.  Delicious!
