One of my favorite cookie recipes is one that I originally found on the Kraft website, and that I adapted slightly. I use only all natural, no sugar added peanut butter instead of the Kraft peanut butter. I also cut down the sugar substantially and add a few chocolate chips. I am a peanut lover and I find these to be full of peanutty flavour with just a hint of sweetness.
PRE HEAT oven to 325°F.
1 cup all natural peanut butter
1 egg –beaten
1/3 – 1/2 cup of sugar
1/3 cup of chocolate chips
Mix all ingredients until well blended. ROLL into balls; place, 4 inches apart, on baking sheets. Flatten with fork. BAKE 15-20 min. or until lightly browned (Do not overbake.) Cool 10 min. on baking sheets; transfer to wire racks. Cool completely. Once cooled, they will harden up slightly, otherwise they will crumble when you pick them up.
You will have a hard time keeping these around, I usually make a double batch so that they will last longer, all of my daughter’s friends who are not gluten free love these cookies. Enjoy! 🙂
